But research indicates ube’s purple pigment packs an extra nutritional punch: One recent study found that purple yams are loaded with antioxidants like anthocyanins, which are responsible for the purple color. Some research suggests that a diet packed with these antioxidants can promote heart and brain health, and possibly even protect you from cancer, according to the USDA.

Approach that purple ice cream with caution, though: While ube is full of beneficial nutrients, this one ingredient doesn’t outweigh all of other not-so-healthy ingredients that are added to your dessert, says Keri Gans, R.D.N., author of The Small Change Diet. “At the end of the day, a dessert is still a dessert, most likely with too much added sugar, fat, and calories,” she says.

So if you’re all about carbs like sweet potatoes and quinoa, go ahead and pack your plate with ube if you want to expand your palate. Just aim to pair it with lean protein and other vegetables if you want to reap the benefits.
