When it comes to buying cream these days, one style fits all. Until a few years ago, it was relatively easy to find light cream as well as heavy cream in most markets. And medium cream was once widely available. But now, light cream has virtually disappeared from the dairy case.

According to several dairy company executives, the reason is simply lack of demand. ''Light cream was used mainly for coffee,'' said Jack Linker, president of Dellwood Dairies. ''Half and half has replaced light cream for that purpose. It may also have something to do with people's concern about diet and the amount of fat they consume.''

The milk fat in half and half measures 10.5 percent. In order to be labeled ''light cream'' the product must contain a minimum of 18 percent milk fat, according to Food and Drug Administration standards of identity. Heavy cream has a minimum of 36 percent milk fat (and frequently measures 38 to 40 percent). Medium cream would have to contain 25 percent. At one time there was even a product called ''light whipping cream'' on the market with 30 percent milk fat.

Dairy companies began to discover that light cream was not selling, and when dairy products go unsold after the expiration date, the dairy must accept them for return. So they simply decided to withdraw the product.

Some light cream is still being packed for restaurant use. And the half-pint containers of light cream that may continue to appear in some supermarkets will invariably be ultrapasteurized to extend the shelf life many weeks beyond the five days mandated in New York City.

(Outside the city, the expiration date for identical products, where it exists, may be as much as 10 days. Fresh milk and cream, when properly maintained at 40 degrees Fahrenheit, has a shelf life of 12 days, according to Charles Schwartz of Elmhurst Dairies.)

Ultrapasteurization is a process by which the product is heated to 280 degrees for at least two minutes, as compared with 161 degrees for 15 seconds (or 145 degrees for 30 minutes) in normal pasteurization. The higher heat kills more bacteria. But it also gives the product a slightly cooked flavor.

The ultrapasteurization process has been approved for fluid milk sold in the Middle West. Aseptic packaging of this milk also permits it to be stored at room temperature until the container is opened, a technique that has become fairly common in Europe.

Rather than searching for or using ultrapasteurized light cream when a recipe calls for the ingredient, the only time when light cream seems to be essential, you can make your own.

A mixture of half fresh heavy cream and half milk (either whole or skimmed) will yield cream with a fat content of 18 to 20 percent, exactly that of light cream.
