Ingredients

  • 2lbs rocky mountain oysters
  • 1 cup coconut flour
  • 1/2 cup Parmesan cheese finely grated
  • 2 egg large
  • ⅓ lb tallow or lard for frying
  • Salt to taste

Instructions

  1. Place rocky mountain oysters on a paper towel to dry
  2. In a medium-sized bowl, mix together coconut flour and Parmesan cheese.
  3. In a separate, medium-sized bowl, beat the eggs.
  4. One at a time, lightly coat the “oysters” in the coconut-Parmesan mixture. Transfer the oyster to the beaten egg, then right back to the flour-cheese mixture. Set aside until all “oysters” have been coated.
  5. Heat your tallow or lard in a large frying pot over medium-high heat. Once bubbles appear, gently place your breaded “oysters” into the pot.
  6. Fry each side of the “oyster” until the breading becomes a golden color. Note: make sure to turn the “oysters” so the cheese in the breading doesn’t stick to the bottom of your pan.
  7. Transfer the “oysters” to a dry paper towel.

Enjoy on their own or with keto condiments like keto mayo, ranch, cheese sauce, or BBQ sauce.

Carnivore Diet Rocky Mountain Oysters Recipe

Here’s another variation on the beloved fried rocky mountain oyster, just a heck of a lot healthier and tastier, and completely made with animal products for a carnivore diet snack.

In place of unhealthy seed (vegetable) oils and grain flowers, we use wholesome pork cracklings (or rinds), and molecularly stable animal fats for frying.

Ingredients

Instructions

  1. Blend the pork cracklings* and until they reach the consistency of an oily powder
  2. Place the pork crackling powder in a medium-sized bowl
  3. Beat two eggs in a small bowl.
  4. Dip each bull testicl* into the egg mixture. Once fully coated, immerse it into the pork crackling powder and roll it around until it’s fully coated with a thick layer. The powder will be oily and should stick together. Make sure the breading layer is thick.
  5. Place the coated rocky mountain oysters on a parchment paper-lined baking sheet.
  6. Salt breaded testicl*s liberally
  7. Bake for 20 minutes at 400 degrees, flip, then bake for another 20-25 minutes
  8. Dip in melted carnivore diet blue cheese and enjoy!

When finished, the coating should be hard to the touch and crunchy.

If you make them in an air fryer, cook for 20-30 min at 400 degrees.
